Vegan Chocolate Muffins
Delicious and chocolaty vegan muffins
Servings: 8 medium muffins
- 220 g all purpose flour
- 100 g organic cane sugar
- 50 g cocoa powder
- 1 tsp baking powder
- 250 ml soy milk
- 1 tsp apple cider vinegar
- 100 ml melted vegan butter
- 1/4 tsp salt
Preheat the oven at 180°
Add apple sider vinegar to soy milk and set it aside.
Shift the flour, sugar, cocoa powder and baking powder into a large bowl. Add salt and Mix well to combine with a whisker.
Pour in the soy milk mixture and melted butter into the dry mixture. Mix with a spatula until it's just combined. Don't over mix it! If you see little lumps of dry ingredients it's all good, keep going.
Pour the mixture into muffin cups or muffin baking tin leaving a little space on top.
Bake in the oven for 25mins or until a skewer inserted comes out clean.
