As Christmas Day is coming up, I always think of what presents get for my family and friends.
It’s not always easy to find the perfect present for everyone but you know one thing that never fails? A bag full of delicious Christmas cookies!
Cookies are actually quite easy to bake, takes under 15mins to bake and it can be done in one bowl! How cool is that?
The perfect balance of chewy, soft and moist texture and the easiness of these vegan walnut cookies make them perfect for lovely jolly Christmas gifts for everyone or any other lovely occasion.
In fact, I used to not like baking cookies after an epic fail I made when I was little…
I was following a recipe one day to bake these pretty cutout cookies I found in a book, but I didn’t know how baking works much at that time.
Aaaand the result let me down so badly…
As soon as I picked up one cookie from the tray with excitement, it broke into fine pieces like sand!
It did not stick together and you know how disappointed I was back then.
But as you can see in the pictures above, if you ask me today cookies are one of my favourite things to bake!
I tried and learned how to bake the perfect cookies just the way I want them – chewy, soft and moist. So I can confidently say that you can bake your perfect cookies too with the tips I give you now!
How to make these vegan walnut cookies
This vegan walnut cookie recipe will make about 18 medium size cookies.
If you want to make less, simply half the amount of ingredients and if you want to make more double but you are going to need a very big bowl so maybe 20 at a time is best! Here’s how to make them.
Half vegan butter, half coconut oil
I used half vegan butter and half coconut oil to make this reicpe. Coconut oil gives a little bit of crispiness and vegan butter creates a soft and moist texture, so I like to use both in my cookie recipes.
You can also just use coconut oil or vegan butter alone, it works too! I tried all the combinations and the only difference is the more vegan butter you use the softer the cookies will be, and the more coconut oil you use the crunchier the cookies will be.
I think the combination of coconut oil and vegan butter gives these cookies the best texture!
For baking time, 12 mins is the best time for soft and moist texture. You might be surprised how soft and undercooked the cookies may look when you take them out of the oven, but don’t worry! Cookies will harden once they are cooled and they become the best texture then.
But if you are looking to get a crunchier texture you can bake 2-3 mins longer. This also depends on the oven you use and the result may be different for each person.
So doing a little experiment and find the best baking time for your oven is recommended!
How can I keep them and how long for?
You can keep them for about 3-4 days at room temperature in an airtight container or in a tightly sealed cookie jar for maximum freshness.
You can also freeze them for a longer shelf life too. Simply put them in an airtight container and store in the freezer for up to 2-3 months. To serve defrost the cookies at room temperature or warm up in a microwave.
Can they be gluten-free?
Yes, they can! To make them gluten-free, replace the flour with gluten-free rice flour. The final product may have a slightly denser texture, but otherwise, they taste as delicious!
