As the Christmas Day is coming up, I always think of what presents I would like to give to my family and friends.
It’s not always easy to find the perfect present for every one but you know one thing that never fails?
A bag full of delicious Christmas cookies!

In fact, I used to not like baking cookies after an epic fail I made when I was little…
I was following a recipe one day to bake this pretty cutout cookies I found in a book, but I didn’t know how baking works much at that time.
Aaaand the result let me down so badly..
As soon as I picked up one cookie from the tray with excitement, it broke into fine pieces like sand!

It did not stick together and you know how disappointed I was back then.
But as you can see in the pictures above, if you ask me today cookies are one of my favourite things to bake!
I tried and learned how to prepare and bake just the way I want my cookies to be.
So I can confidently say that you can bake your perfect cookies too!

Cookies are actually quite easy to bake, takes under 15mins to bake and it can be done in one bowl!
How cool is that?

●soft and moist
●yet chunky thanks to the walnuts

This vegan walnut cookie recipe will make 20 medium size cookies.
If you want to make less, simply half the amount of ingredients and if you want to make more double but you are going to need a very big bowl so maybe 20 at a time is best!

 

Also you can just use coconut oil or vegan butter, I tried all the combination and the only difference is the more vegan butter you use the softer the cookies will be, and the more coconut oil you use the crunchier the cookies will be.
I think the combination of coconut oil and vegan butter gives these cookies the best texture!

As for baking time, 12 mins is the best time for soft and moist texture but if you are looking to get crunchier texture you can bake 2-3 mins longer.
This also depends on the oven you use and the result may be different for each person.
So doing a little experiment and find the best baking time for your oven is recommended!

Vegan Walnut Cookies – Sweet, soft and moist

What you need:

Tools:

  • Lorem ipsum dolor sit amet, consectetur adipiscing elit. Ut elit tellus, luctus nec ullamcorper mattis, pulvinar dapibus leo.

How to:

    1. Preheat the oven 180C
    2. In a large bowl, shift the flour and put coconut sugar, cane sugar and baking powder and mix thoroughly with a whisker.
    3. Pour in the plant milk and melted coconut oil and vegan butter, mix with a wooden mixing spoon until it makes a firm dough.
    4. Stir in the walnuts and fold in with the spoon.
    5. Once it is all combined, rest the dough in the fridge for at least 1 hour or in the freezer for 30 mins. Be careful not to freeze!
    6. Take the dough out of the fridge and make small balls with your hands. It should make about 20 balls out of the dough.
    7. Put a baking sheet on a baking tray and place the dough allowing to have enough space between each one so that they won’t stick together when they spread during the baking process.
    8. Bake for 12mins for each batch.
    9. Once baked transfer onto a cooling rack.
    10. Eat them while warm with a glass of plant milk, stack them, fill them in a paper back, do whatever you would like!

  • 300 g (2 1/2 cups) All purpose flour
  • 120 g (1 cup) Coconut sugar
  • 105 g (3/4 cup) Organic cane sugar
  • 100 ml (1/2 cup) Your favourite plant milk
  • 100 ml (1/2 cup) Melted coconut oil
  • 50 ml (1/4 cup) Melted vegan butter
  • 80 g Walnuts broken into chunky pieces
  • 1 tsp Baking powder
