Good evening everyone in Tokyo and good morning to people in Europe!
It’s getting  colder and colder in Tokyo, I imagine it’s even colder in Europe and NY city so keep yourselves warm and cozy everyone:)

Today’s recipe is somewhat great on those cold days and is one of my favourite recipes. Vegan veggie burger!
It’s vegan, gluten-free, soy-free and packed with protein and other good nutrients. I love having a burger on my sofa while watching my favourite shows on Netflix.. What a nice way to spend time!

I have tried making veggie patty with different ingredients like soybeans, chickpeas, wheat gluten etc…
While all of them tasted wonderful with the unique texture that comes from each ingredient, so far I’m in LOVE with the veggie burger made with lentils!

Why lentils for this vegan veggie burger?

Lentil is such a versatile legume.
I often see people use it as meat substitute for bolognas pasta and in fast this recipe can be made into bolognas too! So versatile isn’t it? I am creating a new recipe for that soon.

Also for those who are TIRED of hearing “Where do you get your protein from?”, I am pleased to tell you that lentil is also a very good source of protein in vegan diet!
I cup of cooked lentils provides whopping 17g of protein. It is also a great source of iron and potassium too!

What does the lentil veggie patty taste like?

Another thing I like about using lentils in my vegan veggie patty is that it gives really nice texture and taste, that is almost identical to meat patty. So my family and friends couldn’t believe it was made from lentils!

Coconut oil in this veggie patty also takes an important part in this vegan veggie burger. It gives a nice juiciness and the combination of lentils and coconut oil is the BEST when it comes to veggie patty.

This veggie burger was sooooooo good when I first tried this recipe I was saying to myself “OMG what have I just made, this totally taste like a burger I used to eat but even BETTER!!”

How do you cook lentils?

Unlike other legumes, lentils don’t need pre-soaking. So you can cook them straight from the jar! This is one of the things I love about lentils because it shortens the time of the whole process.

Lentils also cook very quickly, about 20mins depending on the type of lentils you cook with. I used brown lentils which takes about 20-25mins to cook. That means if you already have boiling water ready it only takes 20mins to the perfectly cooked lentils from the moment you pour them from the jar to your sauce pan. Hurray!

How to make the vegan veggie burger

This vegan veggie burger recipe only calls for 4 main ingredients.
Great for quick burger lunch or dinner if you fancy a quick and delicious meal or you can add it on a salad to give more volume and nutrition!

Here are some tips to make this vegan veggie burger.

1. Use brown/green lentils

There are so many types of lentils and you may get confused which one to get for this recipe. Always go for brown or green lentils when making this vegan veggie burger. I recommend you to use brown lentils but green lentils do the job perfectly too!

This is because brown and green lentils have thicker body and are chunkier than red lentils, of which texture is ideal for making a veggie burger.

2. Cook your lentils with salt

Just like pasta, cook your lentils with salt so that it has nice light salty flavour to it and you won’t need to add too much salt later in the mixing process!

Just add about 1-2 tsp of pink Himalayan salt and cook for 20-25 mins. Taste and adjust the amount of salt if needed.

3. Coconut oil

Coconut oil is very important in this vegan veggie burger recipe! Let me explain why. Coconut oil contains GOOD natural saturated fat. Meat contains saturated fat too but this one is the BAD kind of saturated fat that gives you heart diseases and other nasty health problems to you. 

However, this saturated fat is key to the juiciness in burger that everyone loves. So here our coconut oil! To give the healthy and delicious juiciness without any nasty stuff.

4. Flax seed

Flax seed in this recipe works as the binder here. Because we are not using eggs to hold our veggie patty, flax seed works perfectly to hold the veggie patty together!

  1. Put all the ingredients in a food processor and process until it makes a firm dough. Don’t process too much, you want to leave it where you see little bits of lentils.
  2. Form patties with your hands.
  3. Grease a frying pan with coconut oil.
  4. Cook the patties on each side for about 2-3 mints.
  5. Place in a burger bun with your favourite greens, slice of tomato, and vegan cheese slice.
  6. Enjoy!

Food processor

To ground almonds, I use my KitchenAid food processor!

If you are looking for a good but not pricy food processor, This one is very affordable and do a really good job. I use this to ground nuts, make nut butters, cake fillings, pesto, basically you can make anything with this!

Mine is white like the one in the picture but they have a selection of colours to choose from, like red, green etc. so you can go for the one that suits your kitchen theme colour:)
