Love toast? Love peanut butter? Me too! This vegan peanut butter and fruit toast makes a wonderful breakfast that is quick, super nutritious and most importantly delicious.

Today I am posting a nice quick vegan peanut butter and fruit toast recipe for breakfast I have when I don’t have time in the morning!
Who doesn’t like a nice slice of toast with creamy and crunchy peanut butter on? No one! They are my go-to breakfast when I don’t have time in the morning. It’s super easy and quick to make, and so yummy.
Here is how to make this toast!
How to vegan peanut butter and fruit toast
I made this toast recipe with rye bread. The rye bread I used is a very thin one and has this wholesome nutty flavour. You can toast it and spread some nut butter, or simply just vegan butter on.
Rye bread is one of my favourite bread now, but when I first tried it I thought it was AWFUL. Because I didn’t know the sour and wheaty flavour it had, I actually thought it had gone rancid when I first put it in my mouth!
For a while, I didn’t want to eat rye bread but I gave it another try because I saw a lovely picture of rye bread with some toppings on Instagram. And turned out with the right toppings it tastes good!
So be aware if you have never tested rye bread, it might be too strong for your taste bud but try it with some of your favourite toppings like peanut butter or hummus with cherry tomatoes, etc.
I used creamy unsalted peanut butter with no added sugar in it. I find it wholesome and much healthier than those that have additives in them. Those store-bought peanut butter often have a lot of salt and sugar, and you have no idea how much of them are in it and it’s not always healthy.
Because of that, I use natural peanut butter with just peanuts as the ingredient, and I drizzle some maple syrup on top of it. So that it’s healthy and sweet at the same time! You can even sprinkle a little coarse salt to make it a little fancy too.
As the title suggests, I topped my toast with some fruits! I used some bananas, raspberries, blackberries, and blueberries. You can feel free to top with your favourite fruits such as figs, strawberries, etc.
I also sprinkled some homemade buckwheat granola and some pumpkin seeds to make it even more nutritious and to give some crunchy texture. So yum!
Is rye bread gluten-free?
Rye bread does have less gluten but unfortunately, it’s not gluten-free. I hear some bakeries have gluten-free rye bread, but feel free to use your favourite gluten-free bread!
Where can I find rye bread?
You can try your local supermarket to see if they have rye bread, but if you can’t find it anywhere you can always look online! Rye bread like this is perfect for this vegan peanut butter and fruit toast recipe.
