Description

This vegan lemon blueberry loaf cake is super easy to make, so fluffy, moist, and of course, super delicious and vegan. The fresh and tangy flavour of lemon is the best when paired with sweet and juicy blueberries. I know you can agree on this. It’s even more delicious with a sweet and tangy lemon glaze. Perfect for bringing to home parties and sharing with your friends and family.

Ingredients

Scale

For the loaf cake

For the lemon glaze

  • 1/2 cup (65g) powdered sugar
  • 12 tbsp lemon juice

Instructions

  1. Preheat the oven to 180°C(350°F).
  2. Melt the vegan butter in a small saucepan over low heat. Stir once it’s melted to prevent it from burning. Set aside.
  3. Mix the soy milk and lemon juice in a small bowl. Set aside.
  4. Mix the cornflour and water in a small bowl. Set aside.
  5. In a large mixing bowl, mix well the flour, sugar, baking powder, and baking soda with a whisk.
  6. Pour the soy milk and lemon mixture, melted vegan butter, cornflour mix, and vanilla into the dry mixture. Mix with a large wooden spoon gently. Be careful not to over-mix!
  7. Add in the blueberries and fold with the same large wooden spoon gently.
  8. Transfer the batter into a loaf tin and bake for 50 mins until an inserted toothpick comes out clean.
  9. To make the glaze, simply mix all the ingredients together.
  10. Let the loaf cool completely. Take it out from the tin and drizzle the glaze.
  11. Slice and enjoy!

Notes

Be careful not to overmix the batter. It can create too much gluten.

Coat the blueberries in flour to prevent them from sinking.

Cool the loaf cake completely before cutting it into slices.

Use parchment paper to prevent the loaf from sticking to the tin.

If your batter is looking too runny, add a tablespoon or 2 of flour to the batter and see if it helps.
