Vegan caramel sauce – Simple and easy

For so long. I thought making decent, melty,  sweet vegan caramel sauce at home was impossible. Until I succeeded in making my perfect vegan caramel sauce the other day!
This vegan caramel sauce is a must have in your kitchen. It’s very easy to make and is so versatile, goes nicely on pancakes, waffles, muffins, peanut butter toast, porridge… The choice is literally endless.
Today I want to share the recipe for this caramel sauce, and also some information and links for you to help what is happening in the world at the moment support black people.
As an asian myself, racism is something that I have been experienced myself and want to eliminate from the world.
So I hope you enjoy the caramel sauce and take a little of your time to read further into this blog post today.

So! Let’s get into the recipe part first shall we?
As I said earlier, I thought making a decent vegan caramel sauce was impossible because I had so many failures (as usual) and almost gave up on making it. Some days I don’t like the taste, some days the recipe won’t make the best texture or go completely wrong and bubble up, burn, hardens into rock solid caramel candy that your teeth would break if biting into it etc…

So I took a time off from making it and on a morning just a week ago, I felt like making caramel sauce again. This time, I was determined to perfect my sauce, got a new sauce pan and ingredients.

And I am pleased to let you know that I did it! I made THE PERFECT CARAMEL SAUCE at the third attempt! (Yes I still failed twice haha.)
I leant a lot about making caramel sauce from this experience so I want to share some tips with you to make my perfect caramel sauce.

Tips to make the perfect vegan caramel sauce

1. Use a medium size sauce pan

You might be wondering why I got a new sauce pan. It is because at the ingredients combining stage of this recipe, it starts to bubble up. Quite al lot. The sauce pan I was using for the first few attempts was too small and left me no space to stir the mixture.
So make sure that you use slightly bigger sauce pan, my new one is 18cm in width and it does a great job for this recipe!

2. Be patient when melting the sugar

 Yes, you first have to melt the sugar and this takes quite a long time. So be patient when melting the sugar, because if you don’t melt the sugar completely until it’s syrupy, the texture will be lumpy and sandy with sugar crystals. Make sure that sugar becomes smooth syrup first.
The sugar starts to stick together and form crumbles, then it starts to melt. Just make sure that you keep staring at this stage and there is no sugar crystals left. 

3. But don’t cook the sugar too long!

Ok so now you are like what do you want me to do?! I know I know, hear me out. I want you to cook the sugar until syrupy, but no further. This is the most horrible mistake I made at my very first attempt. I didn’t know how long I had to cook so I kept cooking after it went syrupy.
And what happened next was it started BUBBLING UP LIKE BLACK MAGMA FROM AN ERUPTED VOLCANO.
Yes I panicked. I cooked the sugar way too long, and I don’t want you to make this mistake too.
It’s messy and takes ages to clean up everything.

4. All room temperature

Sugar starts to harden when temperature starts to cool down. It means all of the ingredients have to be at room temperature so that when adding them to the sugar syrup it won’t  start to harden.
Take all the ingredients out from the fridge in advance to make sure every step of caramel sauce making goes smoothly:)

This vegan caramel sauce goes wonderfully well with pancakes, waffles, toasts, porridge, etc.

What you need:

How to:

  1. Heat a medium size sauce pan (mine is 18cm wide) on the medium heat and cook the sugar and maple syrup with a  large wooden spoon until it melts into syrup. It starts to stick together and crumble, keep stirring at this stage to avoid burning at the bottom of the pan.
  2. When the sugar has completely melted and smooth, remove the pan from the heat immediately. Place the pan on the counter top.
  3. Add the coconut cream. When you add the coconut cream, it will bubble up quite a lot so be extra careful not to burn yourself at this stage. Stir quickly with a large wooden spoon to mix completely.
  4. Add the vegan butter and stir again. At this stage the bubbling should stop and the caramel mixture should be smooth and melty.
  5. Add the salt and stir through. Let it cool down to the room temperature and pour in a glass bottle container.
  6. Place in the fridge to thicken further.
  7. Enjoy!

It has broken the heart of too many, and this kind of tragic has to end now.
My heart goes out to Mr. George Floyd, Mr. Ahmaud Arbery, and the family and friends of them, and many more who are a hidden victim of horrible racism.

I am asian, I am not black, I am not white, I will never understand the pain that black people have gone through and will go through.
But as an asian girl who has an experience of discrimination myself because of my race, I cannot stay silent and act nothing.
Racism is never acceptable, discrimination is our enemy. We can stop this together.

We all live in different places, different countries, and it’s not easy to be together especially in the current situation where coronavirus is still out there. 
However, there are many ways that we can help and support each other and make the world we live in a better place.

Why I’m no longer talking to white people about racism – This is a book a friend of mine recommended and I just started reading to educate myself.

To kill a mocking bird – This book is a novel about a white lawyer defends a black guy in the 1930s. I read this a long time ago and intending to read again.

What I am doing to educate myself and support my black friends

A few days ago, I posted an instagram story saying “Why do people do riots? Violence seems wrong to me and I don’t think Mr. Floyd would’ve wanted this.”
After a while, I thought about it once again after I got some replies. While it’s true that I do think violence is not the solution, I didn’t know the pain black people go through.

What if it was my brother who was killed by the police because he was asian? What if it was a brother or father of my best friends? Would I have said the same thing? Would I have felt that violence was what is needed to stop all the evil we have in this world?

When I thought it that way, I got very confused. I don’t want anyone to get hurt, but then if we don’t do anything that makes big impact like riots, nothing will change.

And I realised that I was uneducated on this topic despite the fact that many of my friends are black. I have never had the conversation. I was ignorant.

Like I said earlier, I am not black or white. I am asian and I was born in Japan where majority of the people who live here are Japanese. Racism is hardly talked about in this country.
But I hear from my friends who are POC and living in Japan that they do face discrimination because of their race.

And being asian myself I faced discrimination when I lived overseas because of my race. I am a lucky one though because I have heard so many more stories that happened to my asian friends with much worse discrimination.

Despite all this, racism has been one of the things that I knew exists, but unconsciously avoided all of my life.

The pain black people are going through is completely different to what I have experienced and it’s not something that can be compared. I will never know the pain my friends are going through.

But I know that I can educate myself and support them. I can learn and grow as a person and contribute to make the world better for all race.
So for now, I would like to take a little time off and use the time to educate myself and others like my family.

Until black lives matter, no life matters.
Until black lives matter, we all stand together.
Until black lives matter, we all fight together.

Vegan caramel sauce

Smooth and melty vegan caramel sauce you can make at home

Ingredients

  • 1 + 1/2 cups (200g) brown sugar
  • 1/4 cup (50g) vegan butter
  • 1/2 cup (100ml) coconut cream
  • 2 tbsp maple syrup
  • Pinch of salt

Instructions

  • Heat a medium size sauce pan (mine is 18cm wide) on the medium heat and cook the sugar and maple syrup with a  large wooden spoon until it melts into syrup. It starts to stick together and crumble, keep stirring at this stage to avoid burning at the bottom of the pan.
